"From a Favorite Brand Name Recipes book. I've made too many yeast roll recipes to count but these are my hands down favorite. I make them for all holiday meals and whenever bringing dinner to someone. It's really easy with the bread machine and everyone loves them. It's a lot of butter but don't scrimp, they're well worth it! I've doubled the recipe and either baked in two pans or in a 13x9 pan. If you do this, just watch the baking time and make sure the middle rolls are cooked through."

  1. I tested about four different dinner roll recipes before finally deciding that this was the best one. I was a little nervous at first because it seemed that they weren't rising fast enough, but I was patient and waited until they had doubled before putting them in the oven. The end result was a light and buttery dinner roll. Took me straight back to my childhood. This recipe's a keeper!

  2. These were so easy and SOOOO tasty!! Even my picky daughter loved them! I did as another reviewer and pinched the dough into 16 equal pieces and then rolled them in my hands to make round balls. They looked awesome! A definite must-do again!

  3. I made this for Christmas, it needs way more butter in the pan for these rolls than stated. I even poured some melted butter with garlic on the top to add more flavor. However, I did love this recipe and will make it again. My daughter brought over her God Children and the little boy that was two years old, he refused to eat anything but these rolls, he loved them so much and if he could talk better he would have so himself but the look on his face as he ate all 4 said it all, we had to stop him from eating them.

  4. Wow! so fluffy, full of flavor and easy to make! There were 4 of us and we gobbled them up:) WIll definately be making these again! They rose very nicely for me too!

  5. I'm so glad I found this recipe! These were so easy to make and about as close to my grandma's homemade as can get without all the time and trouble. I can say for sure these will be made often at my house! Thanks so much for posting!

  1. These were good, pretty tasty. Maybe it was using the all-purpose flour instead of bread flour, or maybe it was the way mine got crunchy on the buttery bottoms, but I was a little disappointed. I'd expected a softer, more refined roll, I think. Baked 12 minutes, followed directions exactly, using our new Cuisinart bread maker (CBK-200). I don't know where the two hours prep time, plus 2.75 hours cooking/baking time comes from--it's only 12 minutes to bake, and my machine did the dough in an hour and 40 minutes, plus an extra 30 minutes to rise... so it's about 2.8 hours total to make these rolls. Thanks for posting! Edited to add: the crunchy bottoms disappeared overnight, so the rolls were better the second day.

  2. I have never attempted to make rolls before and after this easy recipe I'm wondering why!! The only change I made was to use 4 TBSP of melted butter instead of five in the pan and over the rolls. I also baked them for only 10 mins and the rolls were perfect!Next time I will try the whole wheat flour and update my success. Thanks!

FAQs

Should you brush butter on rolls before baking? ›

Butter basting: Rolls can be brushed with butter before, during, or after baking. While it doesn't brown the surface as much as egg wash will, it does promote browning and adds a lot of flavor.

Which oil is best for bread maker? ›

To oil the bread spindle shaft, Bread Machine Digest recommends ONLY using either 3-in-1 oil, or sewing machine oil. Do not use any other oil types on the spindle shaft and be sure to read all the information on the oil packaging before using.

What pan is best for rolls? ›

Cast iron can be used on the stove top or directly in the oven. If you don't have a large 11 inch cast iron pan, you can use a glass baking dish sprayed with nonstick spray. A 9×13 size would work well. It's best to have the rolls all touching each other when you arrange them in the pan, and I'll tell you why…

When making bread in a bread machine should the butter be melted? ›

Butter – Melt or soften butter or margarine in the microwave before adding it to the machine. Eggs – I bring my eggs to room temperature by placing them in a cup of really warm water for several minutes before adding.

Should you brush bread before baking? ›

MILK: Brushing with milk will help to color the crust, the sugars in the milk helping to brown it. WATER: Water is often sprayed or brushed onto bread before it is placed in a very hot oven, and during baking, to give the bread an extra-crisp crust.

What do you put on rolls before baking? ›

Preheat oven 350 degrees F. Brush rolls with approximately 1 ½ tablespoons melted butter. Bake for 15- 20 minutes or until golden. Remove from oven and brush with remaining butter and sprinkle with garlic salt.

Why add egg to bread dough? ›

besides the nutritional benefits there are a few other good reasons to use egg in breadmaking. It makes the bread lighter and fluffier. The reason for that is the fat in the yolk that inhibits gluten formation just as any other fat would. This results in a looser dough that can expand and puff up more.

What type of flour is often recommended in bread machines? ›

Just be sure to use a flour with a high protein content. King Arthur Unbleached All-Purpose Flour, with its high gluten, is an excellent flour for bread machines.

What happens if you use too much yeast when making bread? ›

This can affect the bread by adding a "yeasty" taste if you put too much into the dough. General amounts of yeast are around 1 - 2 % of the flour, by weight. Too much yeast could cause the dough to go flat by releasing gas before the flour is ready to expand.

What yeast is best for rolls? ›

Yeast: You can use active dry yeast or instant yeast. If using active dry yeast, the rise times will be a little longer. I recommend Platinum Yeast from Red Star, which is an instant yeast blended with natural dough improvers.

How do you know when your rolls are done? ›

Use a thermometer (I like the Thermapen) to assess the doneness of pan breads, freeform loaves, and soft rolls. A temperature of 190°F at the center will yield bread that's fully baked (soft and moist) but not over-baked (tough and dry).

What type of pans do professional bakers use? ›

Baking pans are frequently made from aluminum (an excellent heat conductor), or an aluminum-steel combination. Less common are stainless steel pans; while easy to clean and non-reactive, they don't conduct heat as well as aluminum.

Why does my bread machine bread come out so dense? ›

too low of a temperature during the rest phase slows the yeast and it will not work fast enough to rise the loaf. Not enough sugar, too much salt, or other problems with the recipe. Salt helps form gluten to trap gas bubbles made by the yeast, and yeast needs sugar to feed on and make gas.

Can I use milk instead of water in bread machine? ›

Water is a common ingredient, but since many people use the timer on their bread machines, most recipes call for non-fat dry milk or powdered buttermilk. However, if you are mixing your dough right away, you can certainly use fresh milk. Simply replace the water with milk or buttermilk and omit the powdered milk.

What does adding butter to bread dough do? ›

Butter, technically a dough enrichment, tenderizes bread dough and limits gluten development, yielding a softer, more tender crumb and a richer flavor. The butter in this sourdough babka dough makes the interior tender—and delicious. Photo by Maurizio Leo.

How do you rub butter on bread? ›

The advantages of buttering your bread before toasting:

You don't have to struggle with spreading the butter; simply dab it all over the surface and let the heat of the oven work its magic.
